NAI Vegan Raita/Chutney

Blend together:

  • 1 white onion chopped into quarters
  • 2 sprigs of mint
  • 1 sprig of cilantro
  • 1 punnet of cherry tomatoes
  • A piece of ginger (about half the size of your index finger – unless you have really unusually sized index fingers. Then just use the size of an average adult index finger) peeled and sliced
  • 12 drops of lime juice
  • 2 jalapeño peppers
  • 3 cups water
  • 4 tablespoons garlic paste
  • 1 tablespoon coriander powder
  • salt as desired

In a separate bowl, mix:

  • 1/4 cup shredded cucumber
  • 10 shakes paprika
  • 10 shakes chili powder
  • black pepper as desired

Combine the blended ingredients and the cucumber mixture.

We mixed 1 cup of the resulting chutney with 4 tablespoons of cultured coconut milk (yogurt substitute) to make the raita. The rest of the chutney we are saving to use for other stuff, but it could all be mixed with “yogurt” in the proportions indicated to just make one big batch of raita.
