Vegetable Stir Fry

We had this veggie stir-fry the other night on white rice. It was great!

In a wok, boil 2 cups of water on high heat. Once the water is boiling, toss in:

  • 1 sliced carrot
  • 900 g of sliced white mushrooms
  • 1/2 red onion chopped
  • 1 can water chestnuts
  • 1 can baby corn
  • 1 bunch of chopped green onions
  •  a handful of cashews
  • 1 tablespoon oil
  • 1 tablespoon soy sauce
  • 1 tablespoon teriyaki sauce
  • 1 tablespoon ginger-garlic paste

Continue boiling until no pooled water remains in wok. Then add:

  • a mixture of 1/2 cup cold water and 1 tablespoon cornstarch
  • a handful of vermicelli noodles

Toss in wok, and then remove wok from heat. Leave to sit (in the oven for example) for a few minutes before serving.
